Key Lime Bars

Crust

  • 11 oz box of vanilla wafers
  • 2 tbls sugar
  • 8 tbls / 115 grams of butter

Filling

  • 1.75 cup / 420 ML condensed milk (14 oz can plus .5 cups)
  • 5 Large egg yolks
  • 3/4 cup key lime juice (180ml)
  • 1 tsp lime zest

Topping

  • 1 cup cold heavy cream
  • 1 tbls confectioners' sugar

Heat oven to 350 degrees

Line 9 inch square pan with parchment paper.

In a food processor, combine vanilla wafers and sugar until you have crumbs. Add butter and continue to process.

Transfer to pan and press into an even layer, bake for 15 to 17 minutes until fragrant.

To prepare the filling, whisk together condesned milk, egg yolks, lime juice, and zest.

Pour filling into crust (ok if it's still warm). Bake until filling is set, about 15 minutes.

Transfer to cooling rack, cover, then refrigerate for 4 hours.
