Chop the onion coarsely
Mince the ginger
Pour 1 tbls oil into a pan and heat
Add chicken breasts to pan and brown on both sides (3 mins one side, 2 on the other)
Add 1 tbls oil to the pan and cook onion for 3 mins. Add ginger and cook for another minute
Add chicken breasts, 1.5 cups chicken broth, pepper and salt
Simmer for 15 minutes on medium low heat, turning breasts after 8 minutes
Remove breasts from pan and cover with foil
Add 1 cup rice and 2 cups broth to the pan, bring to a boil, then turn down and cover for 15 mintues
Slice breasts on cutting board crossways
Garnish with chopped basil
