Chipotle Chicken Marinade

  • 4 pounds boneless, skinless chicken thighs
  • 1/2 red onion
  • 4 garlic cloves
  • 4 tablespoons chipotles in adobo sauce
  • 2 tablespoons ancho chile powder
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • Salt & Pepper to taste

Blend ingredeints in a blender, food processor, or stick blender. Add to a measuring cup and add water to reach 1-1.25 Cups.

Place into a zip lock and marinate 1 hour - overnight.
