Buttermilk Pancakes

  • 2 cups flour
  • 3 tablespoons sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1.25 teaspoons kosher salt
  • 2.5 cups buttermilk
  • 2 large eggs
  • 3 tablespoons butter
  • butter/oil for pan

  

  1. Heat oven to 325 degrees
  2. Whisk together dry ingredients - Flour, sugar, baking powder, baking sode, salt.
  3. Create a well in the center, add buttermilk and eggs. Whisk eggs into the mixture. Do not overmix. Batter can be refrigerated for 1 hour.
  4. Heat pan over med-low heat. Add 1/3 cup batter per pancake.
  5. Wait until bubbles form in surface of pancake, then flip. Cook another 2-5 minutes. Add finished pancakes to baking dish and keep in oven until serving.
